Bibimbap or rice mixed with fresh vegetables has attracted many health-conscious fans from around the world eager to find new and intriguing gastronomic experiences. Bibimbap originated
from the city of Jeonju in the southwestern part of Korea, and there are many subtle variations in ingredients.
It is basically steamed rice with fresh, stirfried or steamed seasoned vegetables added, including zucchini, bean sprouts, carrots and bracken, and often served in a hot pot. Together with the vegetables, people frequently add minced beef and finally an egg fried sunnyside up, then mix everything in the bowl with red pepper paste and sesame oil. They can also sprinkle crushed seaweed bits on top for a delicious hearty meal. Bibimbap is often served with a side serving of clear bean sprout soup resembling consommé.
Since a serving of bibimbap has all the ingredients freshly mixed together in a bowl, it is highly nutritious because it contains many different types of vegetables rich in energy and minerals, and is hugely popular among those watching their weight.
Bibimbap’s growing popularity has seen it included in several in-flight menus, and the dish is loved by many air travelers around the world. Michael Jackson reportedly gave it the thumbs-up for its out-standing taste during a Korean concert tour. Traditionally, Koreans have bibimbap on the first full moon day of the lunar calendar in the month of January. In some regions, it is also a tradition to have bibimbap after rituals commemorating family ancestors.
